Jeff at the Twin Cities Book Festival this Saturday October 11
Jeff will be at the Twin Cities Book Festival this Saturday, October 11, located in the Minnesota State Fairgrounds, at 2:00pm at the booth for Common Good Books (Garrison Keillor’s St. Paul bookstore). Jeff will be talking about the upcoming Gluten Free Artisan Bread in Five Minutes a Day. Author hub at bit.ly/Zs0O4w; there’ll be lots of other Minnesota authors on hand.

Wished I would have known about this! I would have sent my kids to ask a question: a college friend has multiple sensitivities and I’ve been working on a bread recipe that works for him. Most that I’ve encountered use tapioca but he can only tolerate potato starch (his no no’s: wheat, rye, barley, oats, buckwheat, dairy, eggs, peanuts, corn, soy, whey protein…) With the potato starch being so heavy it makes a very dense loaf. I’m planning on getting your new book when its available but would like yo know if you’ve tried the recipes with using only potato starch (and how they would work with the other substitutions I would have to make).

It is going to be a challenge to substitute our flour blend with just potato starch. You may have better luck starting with a flour blend you know he can eat and trying to adjust the recipes to fit it. Do you know if he’s worked with any in the past? The potato, as you suggest, makes for a very dense loaf, if not mixed with other flours. Unfortunately, the flours we would recommend he is sensitive to.

Added note: he can’t have tapioca or arrowroot starches either; only minimal amounts of potato.
