After a long year of testing, writing, and thinking about gluten-free bread, Gluten-Free Artisan Bread in Five Minutes a Day was released on, October 21, 2014, available in independent bookstores, Barnes and Noble, Amazon, and all the online sellers, all over the U.S. (and actually, the world).

Cloches (French for “bell”) are stoneware enclosures that preheat beautifully and create a great result in home ovens, and they’re great for gluten-free bread just as much as my wheat loaves (they can of course be used with either). Much more information about using cloches is here on the website (posted about this last year, and also in 2009).

    1. I have your first 5 min a day book and totally enjoyed the experience but being a bread fanatic and health conscious I had reservations about consuming so much wheat. Voila! Three days ago I saw your new gluten-free book and and here it sits on my kitchen table . I’m anticipating a new adventure with gluten free artisan bread baking. Thank you! My only suggestions might be to include some discussion on grinding your own flours for these breads to make th process more economical. Ed A

    I looked up your website, read all about the new book & watched the video of your Television Interview. Then I just had to order one for each of my two adult daughters as gifts! Both have severe stomach problems. One even has been tested & confirmed to have a severe wheat allergy! She just loves fresh baked goods, especially bread.

I got excited when I saw that my payment had been processed, I felt like a kid waiting for Christmas! now I have the book and I’m reading it like a novel and drooling as I envisage the finished baked goods. I am also looking forward to my celiac-daughter’s reaction to being able to eat a soft brie or camembert with a crusty bageutte or mop up the garlicky both after a bowl of Moules mariniere, as she did before celiac. Oh the joy of bread will be back. Ploughman’s lunches with pickled onions, cheddar, branston (like) pickle and the all important doorstep sized slab of crusty bread.   16. I love baking fresh bread, but have never tried baking gluten-free loaves. My mother has had to switch to a GF diet for medical reasons, so I’ve tried to provide her with tasty GF desserts. I would love to be able to give her fresh GF loaves for her sandwiches and things!!

    I had both your other ones and used them every week – but then my 3 year old little boy (who was very sick) was diagnosed with Celiac Disease. Its been almost a year now and he is beginning to show huge improvement.
    After many failed attempts at GF baking I had finaly givin up. But just this morning I felt like maybe I was ready to begin baking again – and then I saw your GF book!!! I can not wait to try it!
