After a long year of testing, writing, and thinking about gluten-free bread, Gluten-Free Artisan Bread in Five Minutes a Day was released on, October 21, 2014, available in independent bookstores, Barnes and Noble, Amazon, and all the online sellers, all over the U.S. (and actually, the world).

Cloches (French for “bell”) are stoneware enclosures that preheat beautifully and create a great result in home ovens, and they’re great for gluten-free bread just as much as my wheat loaves (they can of course be used with either). Much more information about using cloches is here on the website (posted about this last year, and also in 2009).

  7. I have four bread machines that have just become obsolete after finding this site last week. I cannot believe how easy this bread is to make,and how good it taste. I made the brioche dough that was posted on the site,then made a loaf bread that night and ordered the New Artisan book the same night. Made sticky buns from the book two days later with the brioche dough.Just AWESOME! Now I just took out a picture perfect free form boule a few minutes ago. Again just awesome crispy crust. As much as I am on the net I cannot believe I have not seen or heard of this technique for bread making.It truly is a revolution and I have joined whole hardily.

  8. Usually, people bake bread in tradition way and find it was a hard work especially on the busy day. Your No knead method change many people’s mind to bake bread at home and the outcomes are excellent. Also, the no knead method is very benefit for the senior bakers.

  11. I’ve been on the ABin5 train for the past year as we’ve been RVing through the U.S. I always have bread dough and pizza dough ready in the fridge. Now I don’t need to worry about the next place to buy good bread or what to make for dinner (pizza!). It’s been a delicious convenience. Love the book and have made it mine w/lots of notes.

  21. As someone who has eaten the very best bread (and wine) in France, I must say that this is a winner. We make Champagne and go to Reims to the local Artisan bakers and eat their bread with local cheese and wines. Can’t get more rustic than that! Again this is a world class recipe.
