Dough, rolling pin and ceramic bread pan | Artisan Bread in Five Minutes a Day

Apple-Cranberry Coffee Cake

from Holiday and Celebration Bread in Five Minutes a Day

Makes one 8-inch round (or 4 1/2x 8 1/2 -loaf pan)

Oat streusel topping

1/2 cup oats

1/2 cup all-purpose flour

1/2 cup well packed brown sugar

1/2 cup chopped nuts (optional)

4 tablespoons unsalted butter, melted

Pinch salt

1/2 teaspoon ground cinnamon

Cake

3 apples, thinly sliced

1 1/2 cups fresh cranberries or 3/4 cup cranberry relish (since we all have lots of leftovers from the holidays)

1/4 cup well packed brown sugar

Grated zest of 1/2 orange

1 pound (grapefruit sized piece) Brioche dough (we have a brioche dough in each of our 5 books and all of them will work for this recipe, including the gluten-free recipes) or any other enriched dough from the books.

To make the coffee cake:

This recipe is slightly different than the one in the book, because I made it in a loaf pan and not an 8-inch Springform Pan, but both methods result in a wonderfully tasty coffee cake.

Butter the baking dish

Divide the dough into 3 pieces and roll each piece out to fit the shape of your pan. Line the bottom of the pan with one piece of the dough.

Mix together all the ingredients to make the streusel until it is evenly coated with the butter. Set aside.

Mix together the apples, fresh cranberries, sugar and zest. (If you are using cranberry relish, then leave it to the side, don’t mix it with the apples, although you could do that too).

layer the dough with 1/3 of the apples and cranberries,

then top with 1/3 of the streusel. Repeat with the next layer of dough, apples, cranberries and streusel.

Repeat again with the final layer of each, then cover and let the coffee cake rest for about 90 minutes. Letting it rest will result in lighter layers of dough and more even baking.

Preheat oven to 350°F. Bake for about 55-60 minutes (It should feel set in the middle when poked).

Allow to cool for 15 minutes in the pan before removing from pan.

Allow to cool to room temperature.

  1. I would try something new from the book. I always love to try new recipes on my family and friends. As for the rolling pin maybe some pasta and for the pan…..a chocolate zucchini loaf.

  2. I would bake your milk bread recipe in this pan. i made a batch over the weekend and baked it as rolls on my woodstove and they were amazing! I also want to try your pumpkin bread. I have two of your books and love all of the recipes. I would love to add this one to my library…BTW, they donuts look amazing!

  3. That looks amazing as have many of your holiday postings. I have to see the book for more ideas but I think this looks amazing for Christmas morning. I’ve been spending the month with my daughter and new baby and they make bread, just plain white slow risen no knead bread, all the time. I can’t wait to get back in my own kitchen.

  5. I’d use the loaf pan for a pumpkin bread, but I’d use the rolling pin to make an apple crostada. Yum! I’ve got your other books, but I don’t have this one. It would be a great addition to my AB collection.

I have four of the ABin5 books, and I always have one or two buckets of dough going, at least one white and one whole grain loaf in various stages of consumption, and a feeezer full of bread cubes to satisfy our regular cravings for bread pudding. To make my son happy, I’ve been regularly experimenting with cinnamon and caramel roll combos, mixing up doughs and fillings from the different books. I would roll out a lot more cinnamon rolls with that pin and bake some fabulous loaves (including the ham-cheese-cabbage filled bread from Healthy Breads) in that Emile Henry pan!

  9. This time of year, cherry and almond are my favorite flavors to work with. I’d make a cherry almond bread pudding because bread is lifeeeee! And it still looks festive.

  10. Bread puddings! I love taking leftover breads of all sorts and pairing them with fresh fruits, dried fruits, nuts and ever cheeses with herbs for savory versions. This dish would be ideal for creating them!

It’s one of this things that immediately makes me feel at home – no matter where I’m living when I make it, I’m transported back to northern MN at Christmas time.   18. i don’t quite know to say. Baking is better for me and it’s been a very long time since having a big interest in making bread but i used to make a new loaf or two when I started with sourdough. That resulted in a beautiful crumb and taste. Now, the very idea of a boule with a amazing crust has me more interested in bread again. It is so easy and not too demanding on timing and the number of ingredients. Now is the time to branch out into what has been shown here. So many ideas and not enough time. All I need now is the book and the rolling pin. And with more inspiration from the comments I’ve read already! It is the best way to keep the kitchen warm and the aromas!!! Besides, my birthday is just a few days before Christmas.
